Mushroom ghee roast | Mushroom Recipe

Prep time: 30 mins
Cook time: 30 mins
Number of servings: 3-4 persons

Ingredients

For Masala

Coriander Seeds - 1 & 1/2 tbsp
Peppercorns - 1/2 tsp
Cumin Seeds - 1 tsp
Fennel Seeds - 1/2 tsp
Fenugreek Seeds - 1/4 tsp
Kashmiri Red Chili - 5 nos
Red Chili - 3 nos
Garlic - 2 cloves
Ginger - 1 piece chopped
Tamarind - 3 small piece
Ghee - 1/2 tsp


For Marination

Mushroom - 400 gms
Salt - 1 tsp
Juice of a Lemon
Curd -1/2 cup
Ground Masala Paste


For Cooking

Ghee - 2 tbsp
Onion - 3 no chopped
Turmeric Powder - 1/2 tsp
Powdered Jaggery - 1 tbsp
Salt

Method

In a kadai, add ghee and roast coriander seeds, pepper, cumin seeds, fennel seeds, fenugreek seeds, red chili
After a minute add ginger, garlic, tamarind
Roast the ingredients and let it cool
Grind it to a fine paste
To marinate the mushroom, add lemon juice, salt, kashmiri red chili powder, curd and the ground masala
Marinate it for about 30 minutes
In a kadai, add ghee and saute chopped onions
Add turmeric powder, and mix well
Now, add the marinated mushrooms
Mix well and add jaggery
Cook it till the excess moisture evaporates
Your Mushroom Ghee Roast is ready to be served hot.
